Cochinita Pibil is a genuine Mexican treat!
The taco, an iconic dish in Mexican cuisine, has its origins tracing back to ancient times. It all began when the early inhabitants of Mexico discovered the versatility of the tortilla. These flatbreads, known as "tortitas," served multiple purposes. They were not only used as plates to hold various fillings like chili and beans but also as convenient bags to transport food to the men laboring in the fields.
The adaptability of the tortilla made it a staple in Mexican culinary traditions, allowing for the creation of what we now know as tacos. Over the centuries, the taco has evolved, embracing a multitude of flavors, ingredients, and regional variations, cementing its place as one of the most important and beloved dishes in Mexican cuisine.
In Oaxaca, the taco experience reaches new heights. Here, you have the opportunity to craft your own taco masterpiece using our freshly made tortillas, which are prepared from 100% Mexican corn. This dedication to quality ensures that each tortilla is authentic and flavourful, providing the perfect base for your taco creation.
Our signature pork dish, Cochinita Pibil, is a testament to the slow-cooking traditions of the region. The pork is meticulously wrapped in a banana leaf, which helps to retain moisture and infuse the meat with a subtle, earthy flavour. It is then slow-cooked for six hours at a low temperature, resulting in tender, succulent pork that practically melts in your mouth.
To assemble your taco, start with one of our warm, freshly made tortillas. Add a generous portion of the Cochinita Pibil, and then top it with xnipec, made from red onions, sour orange, and fiery habanero peppers. The combination of flavours – the savoury richness of the pork, the tangy zest of the xnipec, and the hearty warmth of the tortilla – creates a taco that is both deeply satisfying and authentically Mexican.
We invite you to join us and savour this extraordinary culinary experience.
