The simplicity of an extraordinary product, the seasonal tomato.

Nowadays, tomatoes are an essential part of the Mediterranean diet and offer numerous health benefits, such as the prevention of cardiovascular diseases, some types of cancer, treatment of diabetes and strengthening of the immune system. We can say that tomatoes are considered a superfood.

These benefits are even greater when it comes to traditionally grown organic tomatoes, as they have been shown to contain more antioxidants and are free of toxins.

At Sagardi, the tomatoes come from our own garden, without intermediaries, ancestral, pure and transgenic-free varieties, which ripen on the plant itself and are harvested at their best moment.

This product is so rich that there are more than 100 varieties of tomato all over the world. Here are some of the ones our chefs work with.

  • Corazón de Buey: it is one of the best known tomato varieties. It is characterised by its large, rounded shape with several grooves on its surface and can weigh up to half a kilo. It is aromatic, sweet and juicy, with a very fleshy texture and a lot of pulp.
     
  • Rosa de Mura: similar to the Corazón de Buey, this variety is of the same large size although more flattened than the previous one and with less pulp. It has a very thin skin and a pinkish flesh, which gives it its name, with an intense but sweet flavour.
     
  • Negre de Gisclareny: unique in its kind, it is distinguished by its dark colour and its wonderful flavour and texture. It has a very high presence of anthocyanins, the same antioxidants found in blueberries and blackberries.
     
  • Meta de cabra: with its long shape and easily recognisable thin skin, this type of tomato stands out for its resistance to bad weather and its tasty flavour. It has a lot of pulp, making it ideal for canning.
     
  • Pare Benet: this variety is characterised by its intense red colour and square shape with 2 or 4 lobes. Its empty inner space makes it ideal for stuffing both cooked and raw.

The chef's main suggestion for tasting farmhouse tomatoes is a refreshing salad of tomato and fresh Ibarra chilli pepper, seasoned with sea salt and extra virgin olive oil, served as a starter or to accompany a delicious grilled fish or a tasty txuleta. A delicacy that is a real treat for the senses and can be enjoyed in all Sagardi establishments.
