Tiene su origen en los \u201carrantzales\u201d, los pescadores vascos, que cocinaban el bonito a bordo de los barcos pesqueros en los que eran capturados, comiendo directamente de la marmita (de aqu\u00ed el origen del nombre del plato).<\/p>\n\n\n\n<p><br>Tradicionalmente, se prepara con bonito aprovechando la temporada veraniega de este tipo de pescado, aunque tambi\u00e9n se puede cocinar con muchos otros pescados como el at\u00fan rojo.<\/p>\n\n\n\n<p>Paso a paso<\/p>\n\n\n\n<p>-Vamos a empezar haciendo el fumet del marmitako. Para ello, vamos a coger las espinas de bonito y las recogeremos en agua y hielo hasta que desangre.<\/p>\n\n\n\n<p>-Seguidamente, lo herviremos hasta que quede un l\u00edquido transparente y lo dejaremos que infusione durante 1 hora.<\/p>\n\n\n\n<p>-Mientras el fumet infusiona, vamos a preparar el bonito para poder cocinarlo de dos maneras distintas.&nbsp;<\/p>\n\n\n\n<p>-Por un lado, cogeremos \u00be partes del lomo y lo dividiremos en dos para cortarlo en dados medianos.<\/p>\n\n\n\n<p>-Por otro lado, guardaremos la parte restante para cortarlo despu\u00e9s de cocinarlo.<\/p>\n\n\n\n<p>-En ambos casos, pondremos un poco de aceite para que no se seque.<\/p>\n\n\n\n<p>-Vamos a poner el aceite, ajo y guindilla en un cazo para sofre\u00edr. Seguidamente, a\u00f1adiremos la cebolla, el pimiento rojo y pimiento verde para rehogar junto a la patata rota para que suelte el almid\u00f3n.<\/p>\n\n\n\n<p>-Incorporaremos la salsa de tomate y la mojaremos con el fumet lo m\u00e1s caliente posible.<\/p>\n\n\n\n<p>-Si vemos que a pesar de que la patata est\u00e9 cocida, el marmitako a\u00fan tiene aspecto l\u00edquido, le vamos a a\u00f1adir 1 o 2 patas rotas m\u00e1s para que coja un poco m\u00e1s de cuerpo.<\/p>\n\n\n\n<p>-Para que no se pasen de cocci\u00f3n, retiraremos el cazo del fuego y agregaremos los dados de bonito para que se hagan con el calor del caldo.<\/p>\n\n\n\n<p>-Con el resto de bonito que hemos guardado al principio, vamos a cortarlo en trozos peque\u00f1os pero gruesos para que en el centro quede una parte cruda y no se pase el punto de cocci\u00f3n cuando lo pasemos por la sart\u00e9n.<\/p>\n\n\n\n<p>-Como estamos en temporada de guindillas, os sugerimos a\u00f1adirlas al plato para completarlo.<\/p>\n\n\n\n<p>-Vamos a coger 6 guindillas y las vamos a fre\u00edr en aceite limpio a 160\u00ba durante 30 segundos aproximadamente a la vez que las vamos removiendo para que nos quede una fritura uniforme. Recuerda que tienen que quedar fritas, pero conservando el color verde vivo.<\/p>\n\n\n\n<p>-Os proponemos poner el contenido del marmitako con los dados de bonito en un plato y a\u00f1adirle el bonito marcado en la sart\u00e9n encima de \u00e9ste, acompa\u00f1ado de las guindillas al gusto.<\/p>\n\n\n\n<p>On egin !<\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>El marmitako es el guiso vasco por excelencia, un estandarte de la cuchara vasca.
