Un cl\u00e1sico que llevamos a\u00f1os haciendo y cocinando al momento en vuestras mesas con producto fresqu\u00edsimo. Recetas tradicionales que pasan de generaci\u00f3n en generaci\u00f3n y que reflejan nuestro compromiso con los ingredientes de calidad.<\/p>\n\n\n\n<p>Paso a paso<\/p>\n\n\n\n<p>&#8211; Para empezar, vamos a limpiar las anchoas retirando toda la tripa y la agalla.&nbsp;<\/p>\n\n\n\n<p>&#8211; En segundo lugar, preparamos un ba\u00f1o de agua con hielo para desangrarlas.<\/p>\n\n\n\n<p>&#8211; Acabadas de desangrar, las secamos con la ayuda de un papel absorbente.<\/p>\n\n\n\n<p>&#8211; Por otro lado, vamos a preparar en una olla el aceite para hervirlas calent\u00e1ndolo a 190\u00ba.<\/p>\n\n\n\n<p>&#8211; Cuando llegue a esa temperatura, incorporamos el diente de ajo cortado en cisel\u00e9 y la guindilla, y los dejaremos fre\u00edr hasta que empiecen a bailar sin dorar.&nbsp;<\/p>\n\n\n\n<p>&#8211; Colocamos sal y perejil sobre las anchoas frescas y las a\u00f1adimos a la olla de aceite hirviendo sin que pierda la temperatura.<\/p>\n\n\n\n<p>&#8211; Las movemos circularmente hasta que el color del blanco del ojo nos indique que ya est\u00e1n bien cocinadas.<\/p>\n\n\n\n<p>&#8211; Las sacamos de la olla una a una con cuidado\u2026 y directas al plato!&nbsp;<\/p>\n\n\n\n<p>En Sagardi nos gusta acompa\u00f1arlas con vinagre de sidra para darle este toque vasco que tanto nos caracteriza.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>On egin !<\/em><\/h3>\n","protected":false},"excerpt":{"rendered":"<p>Las anchoas a la bermeana ya son un emblema de la gastronom\u00eda de Sagardi.
