Sagardi Group brings Oaxaca to Amsterdam

Sagardi Group owned by the brothers Iñaki, Mikel, and Octavio López de Viñaspre García, has expanded its ‘Oaxaca’ brand, a Mexican dining concept in collaboration with chef Joan Bagur.

Specifically, on October 26, they inaugurated a new establishment at 279 Spuistraat, in the center of Amsterdam, Netherlands, joining the one opened in Barcelona in 2014. ‘Oaxaca’ specializes in ‘evolved traditional cuisine that maintains ancient culinary techniques and processes for sauces and dishes but allows the introduction of contemporary avant-garde techniques,’ as explained by the company. In these establishments, ‘you won’t find nachos or Tex-Mex tacos,’ they emphasize, ‘but you will find chicatana ants and chapulines (fried grasshoppers), local delicacies from the culinary capital of Mexico, which inspired the restaurant’s name.’

Chef Joan Bagur explains, ‘For Iñaki and me, the most important thing is that as many people as possible discover this fascinating cuisine. That’s what I promised to Titita, my Mexican mother. Everything we do at ‘Oaxaca’ is done respecting traditions and techniques.’ Chef Iñaki López de Viñaspre adds, ‘Authentic Mexican cuisine, which Ferran Adrià once described as one of the most important in the world after a tasting organized by Joan in 2012, is practically unknown outside of Mexico. After Barcelona, Amsterdam, as a multicultural city with an adventurous gastronomic culture, was the right place for us to change that.
